    This Geisha is known for its balanced and fruity flavour profile. This is also the case with this lot from Los Azacuanes: In this coffee, the nutty creamy notes of hazelnut meet the effervescence of green apple.

    About the coffee

    Carlos is heavily involved in production and has a particular interest in processing and fermentation. He produces natural, honey, and washed coffees and in this case a hybrid process. We first purchased Carlos’ coffee in 2020 and we’ve been in close contact ever since. Last year we commissioned their Pacamara to be processed with our own methodology applied and were so impressed with the results that we commissioned the project again this harvest. This time also with his Geisha crop! Two stages of fermentation were managed in the processing; an initial 24 hours of aerobic fermentation followed by 24 hours of anaerobic fermentation. The coffee was then slow-dried for approximately 40 days.

    Carlos runs the family business Geca Coffee, which owns several farms between Apaneca and Ataco in the Ahuachapan region of El Salvador at altitudes between 1,200 and 1,500 metres above sea level. The farm has received several awards, including the Cup of Excellence in 2008 and again in 2010.

    About the farm

    Carlos Mendez has been growing coffee on the Los Azacuanes finca in El Salvador since 2007. The coffee is grown on the Los Azacuanes farm in the town of Ataco at 1350 metres above sea level. It was named in honour of some migratory birds that signal the change of seasons. In order to protect the environment and the birds and to create special microclimates for the ideal coffee cultivation, the farm is cultivated in the shade. It is owned by the family business of Gerardo and Carlos Mendez Florez.
