    This Typica/Heirloom lot from the Shantawene Washing Station in Ethiopia has super sweet notes of guava and stone fruits. Due to the honey processing, the notes of nectarine come out particularly clearly. With green apple acidity and a lingering, juicy mouthfeel.

    About the coffee

    This honey processed coffee sits somewhere in between a natural and a washed processing wethod. Unlike in washed processing, where all the mucilage and skin is washed away after depulping, leaving only the beans themselves to be dried, in honey processing some mucilage is left on after depulping, giving a gentler fermentation as the beans are dried in the sun.

    This results in a lighter flavour profile that emphasises the sweet, fruity notes from the coffee cherries. It’s produced a bright, almost zesty coffee, with sparkling acidity, a syrupy body and a balanced finish.

    About the farm

    The Shantawene region, in Sidama in Ethiopia’s south-west, is an idyllic corner of the world, perfect for growing coffee. The vegetation is lush and diverse, with many different crops growing amongst the coffees, adding to the sustainability and resilience of the local ecosystem. At an altitude of around 2000 metres, the climate is diverse: sunny and humid days give way to cold nights, which lets coffees ripen slowly, developing complex flavours.

    This coffee was produced at the Buncho Station, a processing facility supplied by 940 small farmers. The station is nestled between a forest and a large waterfall, giving picturesque surroundings for these coffees to be processed. Outputting around 600,000 kilos of coffee every year, the Buncho Station has a particular commitment to maintaining the beautiful environment in which it is located. They use a Panagos eco-friendly depulper, which reduces the amount of water needed to remove the pulp from the coffees, and have strict guidelines on how waste from washing is composted and disposed of.
