    This Typica/Heirloom plot from the Chelbesa Kebele Waching Station in Ethiopia has super sweet caramel notes that don't take too long to develop. The beans have been washed to develop an extremely clear flavour profile with notes of grapefruit and nectarine. With a nice tangerine acidity and a soft, long mouthfeel on the finish.

    About the farm

    This coffee is produced by smallholder farmers in Worka Chelbesa, a village in the Gedeo zone in Ethiopia, and processed in a wet mill by Negusse Debela. Negusse now operates two sites in Worka Chelbesa, one in the Danche sub-area, and processes washed, natural and experimental batches to continuously improve the quality of the final product. The area is known for its dense semi-forest vegetation, which includes enset trees and shade plants that create an ideal environment for shade coffee cultivation.

    Local farmers grow Wolisho and Dega coffee varieties, landraces from the Yirgacheffe region. The cherries are harvested by hand and sorted by hand before being processed. The ground coffee undergoes a 72-hour wet fermentation before being washed in channels. Negusse's ceramic fermentation vessels speed up the fermentation process and improve the clarity of the finished cup. The coffee is then sorted by density to ensure separation into higher quality batches. After fermentation and sorting, the coffee is soaked for two hours to complete the washing process, dried for ten days and then sorted by hand one last time before being prepared for export.
