During harvest time, the cherries are picked by hand and delivered to the processing station the same day. At the Nyakabugi processing station, which is part of the Nyakiri Farmers' Cooperative, the cherries are carefully selected before the hulling process begins. During this process, unripe and overripe cherries are removed. During this process and also during fermentation, the cherries are treated exclusively with fresh river water. The coffee is then dried on raised beds in the sun, and once it has reached the right moisture content, it is taken to the dry husking station for further processing.

    Sieve sorting in Kenya

The AA, AB and other grades used to classify batches in Kenya are only an indication of the sieve size. They are not indicative of cup quality. The AA grade in Kenya is equivalent to the 17 or 18 (17/64 or 18/64 inch) sieve size used in other countries of origin. AA grades often fetch higher prices at auction, although this grade is not an indication of cup quality and an AB lot from a better farm may have a better cup.

    About the farm
