About the coffee

This coffee is one of Don Martin's masterpieces. He developed the special preparation process "777 Double Fermentation" himself. It is a combination of aerobic and anaerobic fermentation. This method takes into account the brix levels in the coffee honey and the ph of the sap and leachate produced during anaerobic fermentation. This helps to accurately estimate the sugars in the bean.

The Red Catuaí variety is the result of a cross between Caturra and Mundo Novo. The variety is characterized by low acidity and a pleasant pronounced bitterness and sweetness.
