As a Head:in our café kitchen, you'll oversee the restaurant's kitchen by guiding other members of the kitchen team, and customising orders to meet guests' needs. You select ingredients and design a seasonal menu. You create regularly changing dishes that encourage guests to keep coming back to see what's new in the restaurant. You work closely with the individual Shop Managers and Baristas. You will report to our head chef Matthew Taylor.
Your duties will include:
Kitchen
- Overseeing the daily operations in the kitchen
Achieve kitchen staffing goals by recruiting, selecting, orienting, onboarding, assigning, planning, directing, counseling and disciplining staff; communicating work expectations; planning, monitoring, evaluating and reviewing work performance; enforcing policies and procedures.
Assist in the development of the food business by implementing approved operational plans, menu testing, menu design and training.
You will ensure that product knowledge and market/competitive information is provided through ongoing on-site training.
You manage inventories and discuss results and variances with relevant departments.
Where possible, you will develop an innovative and evolving approach to service, paying attention to details such as food presentation, portion control, speed of service and adherence to menu plans.
Ordering supplies and utilities as required from designated suppliers and adhering to stocking guidelines: You will ensure that food is rotated on a first-in-first-out basis and check that all food is correctly dated and organised for quality assurance. Determine how much food needs to be ordered and ensure adequate stock levels are maintained.
You will ensure the safe storage of stocks, goods and equipment and ensure that stock is accounted for and control procedures are followed.
Resolve customer problems as needed
You will maintain a high level of cleanliness in the main restaurant and associated areas, including the cellars and back office, by setting up a cleaning schedule and following best practice.
Ensure the kitchen is in a clean, safe and hygienic condition, identify hazards and problems and seek solutions.
Budget planning: you proactively monitor sales, margins and expenses and take appropriate action in a timely manner if there are negative deviations from the budget.
Assist the Shop Manager with changes and adjustments to the menu according to seasonal offerings.
You coordinate with the restaurant management team on orders, budget, kitchen efficiencies and staffing to develop new specials that will attract guests to the café

Staff management
Effectively and efficiently manage the staff in your department
Ensure that all kitchen staff are aware of their responsibilities in relation to health and safety in the workplace and have the minimum qualifications and training to work in a kitchen environment
Guide junior staff in the kitchen, including cooking, preparing food and arranging plates
You take full responsibility for the scheduling of staff and ensure that the wage budget and turnover/workforce ratios are met.
You will organise and lead the induction and training of staff in the department, ensuring that staff have the necessary skills to carry out their work safely and accurately, whilst delivering a high standard of customer service and exceptional performance.
You will ensure that staff are punctual, in correct uniform and adhere to general management guidelines
If necessary, initiate the disciplinary procedure in consultation with the Operations Manager.
You encourage your staff to work safely and look out for the safety of other staff and customers
Attend team meetings as required and contribute to the development and growth of the business through sharing and experience
Ensure that the kitchen team adheres to personal hygiene and uniform guidelines
You promote a culture of flexibility
You will build a positive and direct relationship with all colleagues and monitor the effectiveness of individual progress within the team.
