Our Easter cake is a gorgeous chocolate buttermilk cake with spiced ganache. Our baker Kendall has put together the recipe for a fluffy, moist cake for you here:
Dough1 3/4 cups flour
4 1/2 tablespoons cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cups cocoa powder
1 teaspoon salt 1 cup softened butter (room temperature)
2 3/4 cups sugar
5 large eggs (room temperature)
310ml cups full fat buttermilk (room temperature)
200g chopped dark chocolate
1 cinnamon stick
2m fresh ginger
Preheat the oven to 180 degrees Celsius (upper-lower heat). First, thoroughly grease the cake tin (a ring tin was used here, but another cake tin can also be used) and dust with cocoa. Cream the butter with the sugar, then add the eggs. Mix all the dry ingredients together well in another bowl. Then stir half of them into the sugar mixture together with half of the buttermilk. After everything is well mixed, fold in the rest.
Pour the batter into the prepared cake tin and bake for 30-35 minutes. (While the cake is in the oven, place the spices and cream in a saucepan and heat slowly, do not boil. Cover the warm saucepan and leave the cream to infuse for half an hour. Remove the spices and bring the cream to the boil and melt the chocolate and butter in it, then stir well. Once the cake has cooled, pour the ganache over the cake. If you like, decorate the ganache with Easter bunnies or Easter eggs immediately after pouring it over the cake.
