The high altitudes, fertile soils, climate, and expertise of the farmers make this a pretty safe bet by now. All the more reason for us to find the special coffee gems from the excellent overall offer, of which we are convinced that they will also lead to a great taste experience for you.
We always get to the harvest cycles so-called Green Coffee samples, which we roast all individually and identify for us the coffees that we consider suitable and really convincing. Once we have decided on a small selection of coffees, we invite all our baristas from the cafÃ©s to test the coffees with us and choose the really best. During this last test, one coffee in particular stuck in our minds, which we would now like to offer you as an espresso roast.
A new espresso from Finca El Diviso
El Diviso espresso comes from the Pitalito growing region, the mecca for specialty coffee in Colombia. On the small farm, located at 1700 meters above sea level, Nelson Rodriguez and his family grow this coffee of the Caturra and Castillo varieties and process the coffee in the so-called washed process. The hand-picked coffee cherries are separated from the pulp and then first left in the fermentation tank for 2 full days. This gives the beans their specific and distinct sweetness. The beans are then dried on drying beds for 20 days until the residual moisture is so low that the coffee is suitable for bagging and shipping. We roast the coffee in a very gentle process, so that the aromas and the flavor variety is preserved. Thus, you get an outstanding espresso that tastes of nougat and stone fruits, as well as intense cocoa.
