Natural processing' is the most original way of processing coffee.
Natural' means that after harvesting, the fully ripe coffee cherries are spread out on the patio with their skin, i.e. including their pulp, dried by the sun and then pulped. During this process, the coffee beans absorb the full sweetness of the fruit. Therefore, natural processed coffees are very sweet and fruity in taste. After drying, the coffee is either wet or dry de-pulped and hulled (often at the same time).
This is a resource-saving method that is particularly favored by poorer countries with water scarcity or difficult access to water.
