Natural processing is the most original way of processing coffee.
The coffee cherries are dried whole for weeks in the blazing sun or in the shade of trees without any washing or pulping. Drying the cherries together with the pulp allows the beans to completely absorb the sweetness of the fructose, which is why natural pre-processed coffees have a very sweet and fruity taste. After drying, the coffee is either wet or dry de-pulped and often hulled at the same time.
This is a resource-saving method that is particularly favored by poorer countries with water shortages or difficult access to water.
