In general, green coffee is the unroasted coffee beans. Since we roast fresh weekly, we receive the raw, unroasted beans (green coffee) from our long-term partners via direct trade.
But why is coffee roasted at all? On the one hand, coffee is traditionally roasted to bring out the characteristic flavors of coffee. On the other hand, to remove water from the bean and thus make it more porous so that it can be ground. However, the roasting process is crucial here. Commercially roasted coffees are usually roasted at very high temperature for a short time. Mostly so dark that the actual taste of the bean can no longer be tasted. We try to roast longer and nicer to preserve or support the natural flavor of the bean.
You can also drink green coffee, but it will have a lot of bitter and sour flavors. Green Coffee is in vogue because the ingredients such as caffeine provide for more concentration and better mood and other substances supposedly stimulate the metabolism and thus to lose weight. The intake of Green Coffee remains hotly debated. We prefer to roast the coffee and brew classically ;)
