    About this coffee

    The Finca Liquidambár was founded by the Cocafelol Cooperative in San Marcos in the west of Honduras. The educated staff are focused on innovative and sustainable growing methods achieved by experimenting with their own compost production and organic fertilisers. Nowadays the farm is 28 hectares big and provides space for different coffee plants. Experimenting with varieties and processing methods has led to continuous improvements of bean quality.

    The coffee plants of the Yellow Burbon variety grow at 1600m above sea level underneath a shade-giving leaf canopy. The ripe cherries are hand picked and any spoiled cherries get discarded before they end up it the mill. Our beans were honey processed, that means that the cherries are de-pulped but the honey-like mucilage is remaining on the beans. Afterwards the beans are fermented for 15 hours in anaerobe barrels. Due to the slow fermentation process the beans develop an intense sweet flavour with remarkable fruity notes. The beans are then washed in big water tanks and dried on drying beds for 15-18 days.
