Damon is 19grams Head Chef - he and his freaking awesome team bring all this fine food and dishes on your table. The 19grams Modern brunch is his signature dish and highly inspired by his home New Zealand. Meet him and learn about where he finds his inspiration.

Making sure we are delivering the best food we can put in front of our guests.

Where did you get your skills from? Did you teach yourself everything?
I went to culinary school in New Zealand and learnt everything else from 20 years in the hospitality industry.

What should nobody know about you?

When and Why did you start working at 19grams?
I started working at 19grams after relocating to Berlin from Melbourne in 2018. I wanted a change of place and 19grams needed a chef. Some would say it was fate.

Did you have any other job in coffee before?

How would you describe the 19grams cuisine? What’s typical?
Modern brunch, leaning more towards lunch. We are definitely focused on blending some of the finer details from current evening dining trends into the daytime hours.

Which kitchen tool do you need every day?
My knife

Do you think working in coffee is different to working in a “normal” restaurant? What’s your favourite part about the specialty coffee industry so far?
The hours are certainly better. But I think that even though the focus may be slightly different, the fundamentals are still the same. I guess my favourite part is learning about coffee. I do like to learn and it turns out there is much more to a cup of coffee than you would think.

How many coffees did you drink today?
Depends how many times the baristas ask if I want one. It's hard to say no.

What is your go to brewing method on the weekend/ at home?
Stovetop - I know, I know

What’s been your biggest revelation about the coffee industry since you started working in it?
Did you know coffee beans are green?!
